I've seen some self defense instructionals where they tell you that you should place your elbows in a position to prevent your opponent from getting the high mount. My question is, doesn't this put you in a position to get punched very easily?

There is really no right or wrong answer for this. Sure you dont want some getting high mount on you because it is a struggle to get out of. When I get mounted in MMA I know that I am going to get punched so as soon as the mount happens I just exploded trying to keep the guy off balance. While the guy is off balance I tend to put my arms or elbows into a good position to try to escape. Its all about off balancing the guy ontop because if you dont he thinks about punching ... when his balance is not there he has to think about it rather than punching you.
The rule of thumb is not to get mounted ... easier said than done.

Yes you are going to get punched. Your priority should be getting to a side and getting his knees away if he's low in the mount. If he's high you should be trying to get him to go over the top while keeping your arms out of danger and again on a side. Hopefully you can do these fast enough to get him off balance, in order for him to maintain balance he'll have to get his head down which will leave no room to punch. Good luck.
