Yes! I just read that yesterday. To do fried rice, the rice must have been in the fridge before. I didn't not know that.

Definitely not a must (Japanese restaurants never do that) but it’s an interesting point.
How do you get it heated through without over cooking the other ingredients? such as the egg, coz that’s gonna be fried before you add the rice. Extra heating time seems difficult in that regard. I imagine you’d need to splash some hot water or rice wine on it to heat it through and avoid burning but then you risk mushiness.
I struggle to see how that would work better than rice sitting on warm in the rice cooker.
