Or she's already screwing around on you, and is trying to say things like that to keep you from being suspicious. "there's no way she would cheat on me, if she would do anything for me...."

I guess the context is important.
I was thinking more as a response to a, "would you pick up a sandwich for me from Jimmy John's while you're out?" question. If she gave the, "of course, I'd do anything for you" response, I would chalk it up to her being dumb and not putting a lot of thought into what she was saying.
If it was in response to a question like, "have you been sleeping with one of my friends?" and she fired back with, "of course not, I would do anything for you"... you are completely right my friend.
